2 cleaned squirrels

1 tbl. salt

1 gal. water

1 chopped onion

1 pint lima beans

6 ears of corn

1/2 lb. salt pork

Peeled potatoes

1 tsp. pepper

2 tsp. sugar

1 quart sliced tomatoes



Cut squirrels into pieces. Add salt to water and set to boil. Then add onion, lima beans, corn, salt pork, potatoes, pepper and squirrel pieces. Cover and simmer 2 hours. Then add sugar and tomatoes. Simmer 1 hour longer. Then serve.

2 squirrels, halved.

1/2 cup honey, the thicker, the better.

1 pint cider.

2 bay leaves, crushed.

1 tbsp cornstarch mixed with 2 tbsp of water.

 Method.



Wash and dry the squirrel halves and lay on a broil rack and coat with honey. Broil for 8 minutes about 6 inches from the heat.

Turn them and coat with honey again and broil for 8 more minutes.

Now transfer to a large shallow baking dish and pour in the cider and add the bay leaves.

1 tsp garlic, crushed.

1 cup red wine.

1 cup water.

4 tbsp sugar.

1/4 cup salt.

1/4 tsp pepper.

1 tbsp monsodium glutomate.

In a plastic bowl mix all the ingredients together and marinate the squirrel for about 14 hours. Ensuring the squirrel is covered. When marinating is complete, drain the squirrel and place on baking paper to dry.
