Stuffing:

10 (1 inch thick) slices French bread, cut into cubes 

1 cup dried currants 

4 apples - peeled, cored and sliced 

1 tablespoon dried thyme 

4 tablespoons butter, melted



1 tablespoon vegetable oil

1 (10 pound) goose 

1 onion, chopped 

1 carrot, chopped 

1 stalk celery, chopped 

1 clove garlic, minced 

1 bay leaf 

3 whole cloves 

1 sprig fresh thyme 

1 sprig fresh marjoram 

1/4 cup white wine

4 Goose breasts.

1 medium, chopped onion.

1 tspn old bay seasoning.

2 tbsp butter.

2 boxes of long grain rice. (not the quick cooking stuff)

1 tspn salt.

1/2 tspn pepper.



Cut the goose breasts into cubes. Using a large pan, melt the butter and cook the onion. Now remove the onion and add the goose to the pan and cook until almost done.

Cook the rice according to packet directions- minus 15 minutes. (The rice should still have alot of water with it)

			<description>Ingredients.

1 goose, approx 6lbs. Please ensure the cavity is clean.

2 apples, peeled and quartered.

1 potato, cut in half.

8 strips of bacon.

1 onion, peeled.

Salt and pepper.



Method.

Preheat your oven to 300C.

Rub the cavity of the goose with salt. Now put the potato, onion and the apple pieces in the cavity.

Cover the goose with the strips of bacon. Now put the goose in the oven for about 3 hours. (if your goose is bigger, as a guide cook for 30 minutes per pound)
