You need,
4 Wood pigeons. Ensure cavities are clean.
Olive oil.
1 bottle tomato sauce, 8 ozs.
1/4-1/2 bottle beer.
3 onions, chopped.
1/4 tsp oregano.
3 tbsp parsley,chopped.
Salt and pepper.
Flour.
Method.
Rub the cavities of the pigeons with the flour, salt and pepper.
Heat the olive oil in a large pan, add the pigeons and brown them on all sides. Next, add the oregano, beer, onions and the tomato sauce. Bring to the boil.
Cover and cook on a low heat for 40-45 minutes. About ten minutes prior to serving, stir in the parsley.
