    Venison Chops with Wine Chocolate Sauce.

    Serves 4 people.

    Ingredients
    180ml/6fl.oz. Red Wine
    300ml/10fl.oz. Fresh Beef Stock
    ˝ teasp Chilli Flakes
    2 Garlic Cloves, chopped
    4 tbsp Cranberry Sauce
    175g/ 6oz Dark Chocolate (70% Cocoa solids), grated (check ingredients)

    2 tbsp Oil
    1 large Onion, chopped
    4 Venison Chops

    Instructions

    1. Place the wine, stock, chilli flakes, garlic, cranberry sauce and chocolate in a medium saucepan, bring to simmering point then simmer very gently for about 10 minutes, stirring from time to time, until thickened.

    2. Meanwhile, heat the oil in a large frying pan, add the onion and sauté over a medium heat for 2-3 minutes.

    3. Add the venison chops to the onions and cook for 3-4 minutes on each side.

    4. Add the venison chops and onion to the sauce and continue to cook for a further 5 minutes. Serve immediately.
