    Ingredients.
    1 kg of wild boar, diced.
    1 onion, chopped small.
    1 carrot, chopped small.
    1 tbsp plain flour.
    370 ml good quality red wine.
    50 ml brandy.
    2 bay leaves.
    1 garlic clove, optional.
    50g butter.
    3 peeled and sliced apples.
    salt and pepper

    Method.
    Melt half of the butter in a casserole dish then add the wild boar, stirring until the meat is sealed on all sides. Next, add the carrot and the onion. Sprinkle in the flour, continue cooking and stirring for 3 1/2 minutes. Very slowly, stir in the wine. Now add the garlic and the bayleaves, add salt and pepper to taste.
    While stirring, bring to the boil then place in the oven at 200C or gas mark 5 for 1 hour.
    Now for the apples. Melt the remaining butter in a pan and fry the apples until they are golden brown. (Try to ensure they keep some shape)
    A couple of minutes before serving, add the brandy to the meat.
    On serving, slice the meat, serve with the juices and decorate with the apple.
