Ingredients
• 2 skinless, boneless salmon fillets
• ½ red chilli, deseeded and finely chopped
• 1 tomato, sliced
• 3 tbsp basil pesto
Method
1. Preheat oven to 190C/170C fan/gas mark 5. Place the fillets in a lightly oiled dish and cover the fillets in the pesto, sprinkle with chilli and layer the sliced tomato on top.
2. Bake in the oven for 20-25 minutes, until the salmon is cooked through and serve with a crisp green salad.
