Serves 3 - 4.
Ingredients
•1 kg duck breasts cut into 2” pieces
•2/3 medium onions sliced
•2 tsp garlic or ginger paste
•2 tbs yogurt
•1 large handful coriander leaves
• juice of half lemon (optional)
•1 tsp turmeric
•1 tsp chilli powder
•2 tsp ground coriander
•1 tsp ground cumin
•2-3 tbsp ground almonds
• Salt to taste
•1 tsp garam masala
Instructions
1.Marinate the duck in yogurt and season with salt and pepper
2.Fry onions on medium heat until golden brown (10mins, keep stirring)
3.Remove from pan and into a blender to blitz together with 2/3 tbsp. of water. (Be careful as very hot mixture)
4.Put onion mixture back into pan, add a little more oil and garlic & ginger, turmeric, chilli powder, ground coriander, garam masala, and some salt and stir continually 2/3 mins (add splash of water to prevent mixture sticking to pan)
5.Once the oil has separated from mixture add the duck and mix well together. Add some water simmer until duck is tender (15-20mins)
6.When the oil begins to separate check the duck is cooked
7.Add the ground almonds and stir
8.Add some lemon juice and salt to taste.
9.Garnish with fresh chopped coriander and serve with rice or chapatti
