    Effort: easy.


    •120 ml extra virgin olive oil
    •1 medium rabbit, cut into pieces
    •1 whole bulb garlic, roots and base chopped off
    •1 fresh chilli, chopped
    •2 tbsp tomato purée
    •470 ml white wine
    •5 basil leaves, chopped
    •1 small handful oregano, chopped
    •1 sprig thyme, leaves picked
    •10 cherry tomatoes, halved


    1. Preheat oven to 190C/170C fan/gas 5. Heat up extra virgin olive oil in a saucepan. Place rabbit in hot olive oil. Then add the garlic bulb, chili pepper and a pinch of salt.

    2. Sear the rabbit until golden brown on all sides. Add tomato paste and wine to deglaze the pan.

    3. Add basil, oregano, thyme and tomatoes. Once the wine has reduced, transfer to a baking pan and place in the oven for approximately 30 minutes.
