method
1. Weigh the salmon, then cut down the back and open out. Clean and wash thoroughly.
2. Cut into 4 cm (1 1/2 inch) slices through the joint of the bones
3. Place the salmon slices in a fish kettle or saucepan of boiling salted water and bring back to the boil.
4. Boil rapidly for 1 minute for every 450 g (1 lb) of salmon.
5. Drain, cool and serve with mayonnaise.
