    Ingredients.
    1 goose, approx 6lbs. Please ensure the cavity is clean.
    2 apples, peeled and quartered.
    1 potato, cut in half.
    8 strips of bacon.
    1 onion, peeled.
    Salt and pepper.

    Method.
    Preheat your oven to 300C.
    Rub the cavity of the goose with salt. Now put the potato, onion and the apple pieces in the cavity.
    Cover the goose with the strips of bacon. Now put the goose in the oven for about 3 hours. (if your goose is bigger, as a guide cook for 30 minutes per pound)

    For the sweet brandy sauce.
    2 oz brandy.
    1/2 cup red wine.1/2 cup brown sugar.
    3/4 cup honey.
    1/2 tsp worcestershire sauce.
    Mix all these ingredients together in a small saucepan on a medium heat, stirring briskly until the sugar is dissolved.
    For the last hour of cooking the goose, baste with the sweet brandy sauce every 15-20 minutes.
