Ingredients
600g fresh salmon
100g golden sesame seeds
100g black sesame seeds
500g carrots
1 tablespoon of butter
Salt
Olive oil
A few flakes of sea salt
Method
1.Fillet the salmon then cut into sticks and lightly salt. Coat half the sticks in the golden sesame seeds and the rest in the black sesame seeds.
2.Peel the carrots and boil in salted water then when cooked reserve one carrot and put the rest through a bender and turn into a puree adding the butter and a pinch of salt. Slice up the reserved carrot into shapes of carrot.
3.Then in a frying pan heat up some olive oil and brown the salmon on both sides then drain on kitchen paper. Lightly grease the frying pan and fry the carrot shapes for a minute on each side.
4.Serve the salmon with some flakes of sea salt and accompany with the mashed carrot and carrot shapes.
