    Roe fillets (or your steak/ cut of choice), sinew trimmed off. Fried in a good heavy and hot pan in a little olive oil until cooked to your taste. 6 minutes for me. Let them rest on a warm plate while you get on with the next bit.
    Small clove of garlic finely chopped into the hot pan for a few seconds. Deglaze pan with a glass of red. Add 2 tablespoons redcurrant jelly. Add 150ml venison or veal or beef stock. swoosh it around and simmer until the redcurrant jelly has melted in.
    Add 80-100 gr fresh brambles. Blackberries will also do . Cook until berries are soft.
    Slice through the fillets, pour over the sauce and brambles and plate up with spuds and veg of your choice.
