Serves 4.
Ingredients
◾6 (6 ounce) salmon fillets
◾1/2 – 3/4 pound ripe tomatoes, diced
◾1/2 medium red onion, thinly sliced
◾1/4 cup pitted green olives, sliced
◾1/4 cup roasted red peppers (mild or spicy), sliced
◾1/4 cup white wine
◾1 teaspoon chopped fresh oregano
◾Salt and freshly ground pepper to taste
Directions
Preheat oven to 400°F.
Place fillets in a baking dish and lightly season with salt and pepper.
Combine remaining ingredients in a mixing bowl. Season with salt and pepper and toss to combine.
Pour over salmon.
Bake, uncovered, for 15-20 minutes, or until salmon is just cooked through.
Serve hot, or cool to room temperature and serve over salad greens.
