INGREDIENTS: makes 10-12 skewer
500-700g lean rabbit meat, cubed and ready to go on skewers
For the marinade:
1 walnut-sized piece of fresh ginger root, finely grated
1-3 chillies (to taste) finely chopped
2 garlic cloves, crushed
1¼2 a small onion, grated
2 teaspoons coriander seeds, crushed
2 tablespoons dark soy sauce
1 tablespoon brown sugar
Juice of half a lime
METHOD:
1. Mix all the ingredients for the marinade together in a large bowl, add the rabbit meat and leave in the fridge for at least 2 hours. Soak bamboo skewers in cold water for at least half an hour.
2. Skewer the meat and barbecue for approximately 10 minutes, turning occasionally.
